after the mess that was GRAW & GRAW2's matchmaking and all the connection issues they had, how stable this one is really determines whether I'll pick it up

I never had any problems with the GRAW games either.
What really determines the fate of this game is the online community. And from my experience with the demo you can forget completing any missions without a serious group of friends.
In my 15 or so games we failed every mission because one or two players wouldn't come to the objectives or would just shoot their teammates in order to patch them up and shoot them again. This is the downside of online games.
Other than that its a stripped down, budget Ghost Recon.
