Can you still roam around after you complete the game, I wanna know to see if I'd have to pickpocket all those knives from the start if the game just finishes after you beat it instead of letting you roam around afterwards.

Yes, you can. After the credits you get the Animus all to yourself.

just make sure after the credits roll you get in and find an auto save otherwise u will have to go through them again

Yeahm that's my current problem.

Anyway, what's the best block to use to replay? Anything to look out for? This is a question to anyone.

I'd say the block before Al Mualim is the best.
