I gave it a 2. You can get a majority of the achievements on Easy without any problems, but the Expert hunts are NOT easy by any stretch.
All the achievements are attainable with enough determination and some guides to help you through Expert.

I voted a 2. I was careful not to get penalized any points or that would have been a bummer to play through a second time.
